Flax seeds are new food fads and topped the list on any idiosyncratic diets but on a positive note these tiny brown seeds are going to stay here for its high omega-3 content, the only rich source of omega-3 , other than the fish, derived directly from a plant source. Besides omega-3, flax seeds also has large amounts of vitamin B1, phosphorus and iron, improve cardiovascular and skin health.
But the human body can not absorb the nutrient if it is consumed raw and not digestible also. Hence, flax-seed meals are popular and they can be added to variety of dishes that asked for bran or flour.
Milled flax seeds that are found mostly in stores can be stored for a week or so, depending upon the climate, they go rancid very quickly. So best is to grind the lightly toasted flax seeds in your mixer and use the fresh flax-seed meal in your recipes.
All purpose flour: 2 cup
Flax seed meal : 1/4 cup
Milk: 2 cup
Salt to taste
Sugar: 2 or 3 tsp
Baking powder: 1 tsp
Cinnamon powder: 1 tsp
Butter: 25 gm
Oil / butter for greasing
Method to prepare:
Sieve the flour and prepare a dry mix of flour, salt and baking powder. In a wet bowl, prepare a wet mix of sugar and milk, whisk thoroughly untill it become smooth. Now add the dry and wet mix together and blend it. Add the butter and blend it evenly to pouring consistency. Add more milk if requires, as the batter should be very smooth and lump free.
Heat the griddle or a non stick tawa (or pan), grease it with very little oil and pour a ladle full of pancake mix.
Wait for few minutes till the air bubbles rise to the surface and then flip them and cook for 1 more minute.
Smothered the pancakes with chocolate spread or jams or serve them hot simply with honey or date syrup and topped it with some fresh fruits.
