Chicken is one of the many specialties of Goan cuisine. This hot and spicy Goan fried chicken recipe uses the famous Portuguese peri peri sauce and is usually serves with goan pav or bread.

Ingredients:
Chicken legs: 2
Ginger – garlic paste : 2 tsp
Green chili paste: 1 tsp
Coriander and cumin seeds: 2tbsp
Cinnamon: 1”stick
Cloves: 4
Green cardamom: 4
Tomato puree: 2tbsp
Sugar: 1/4tsp
Oil for frying : 2-3 tbsp

For the sauce:
Kashmiri Red chillies whole: 6
Black Peppercorns: 8-10
Olive oil : 2 tbsp
Cider vinegar: 1/2 cup
Juice of 1 lemon
Salt to taste

Method to Prepare:

Wash and clean the chicken legs properly.

To make the sauce : Roast the dry red chillies and peppercorns, grind them together to a powder and blend it well with vinegar, salt and vegetable or olive oil to make a thick sauce. This is similar to famous Portuguese peri peri sauce.

To the above sauce add  ginger garlic paste, and green chilli paste. Rub the chicken well with juice of one lemon and marinate the chicken pieces with the above mix for 6 -8 hours.

Roast the cumin seeds, coriander seeds,  green cardamoms, cloves, cinnamon and grind to a powder.

Heat two tablespoons oil in a pan, add the marinated chicken pieces and cook on high heat.

Once the chicken is cooked a bit, add the dry spice powder and mix well.

Add 1tbsp oil, tomato puree and let it cook for few more minutes.

Add sugar, adjust the salt and cook till the chicken is done.

Serve the hot Goan fried chicken with bread and pair it with some fruity red wine.
