Saffron Pineapple halwa -remembrance of good times together

Hello ! after a while…

Today I am not in a mood to share anything sweet but yet I am sharing this  bowl of pineapple pudding, in remembrance of good times and to keep alive my faith and hopes.  When your life is in total mess nothing entertains you. I am currently passing through a very bad phase in my life, in my relationship. However the situation is worse, I always believe there exist a scope to rebuild it. A flicker of hope perhaps or the possibility that keeps me going.

So here I am once again, blogging and to make my readers know that I am alive if not kicking. This blog will not die its natural death, the time has not come yet. I never approach blogging from a professional angle, hence the consistency of my blog post follow a sinuous curve reflecting my state of mind as well as the events happening in my life. Wanted to know from you all, what do you prefer – a professional blogging approach or write when only life permits ?

This sweet dish I have prepared a while ago when I was in better frame of my mind. Probably when I thought I was happy or presuming that everything was perfect in my little paradise, only to realize that it was just an illusion.

In the land of milk and honey sugar, every celebration calls for something sweet. So this year on valentine’s day, try this sweet pudding and in india the word sweets or sweetmeats starts and ends with milk and sugar, the prime component for any sweet dish in our country. The fastest, the most delicious word is halwa here. It may have an ancient lineage of muslim ancestry a Mughal influence which reflects largely on the cuisines of india. Halwas are simple, adorable and every spoonful ensure the soul-stirring sweetness of ghee, milk and sugar.

To my list of growing halwas, pineapple halwa is the latest recruit in the great army of indian sweets and I was sure it would taste heavenly. It has something unique flair to it. Sweet with a hint of tanginess, the heady aroma of saffron and the grainy khova weaves some kind of magic. Illusion perhaps but trust me on this, it taste simple awesome.

Ingredients
  • Pineapple (ripe and cut into small pieces) : 3 cups
  • Sugar : ½ cup or more as per taste
  • Mawa / Khova : 200 gm
  • Mix dry fruits (raisin, cashew nut and almonds) : ½ cup
  • Saffron : a large pinch soaked in 1 tbsp warm milk
  • Ghee (clarified butter) : 2-3 tbsp
Instructions
  1. Chop the pineapples into tiny pieces.
  2. In a heavy bottom pan, add the pineapple pieces and let it sweat for few minutes.
  3. When it releases enough juices, add the sugar and let it cook on low heat for 10-15 minutes till the pineapple becomes tender.
  4. I love pineapples to be little caramelized. If you want to retain the bright yellow color then do not let it caramelized.
  5. Once the sugar melts completely add the khova and keep stirring it continuosly.
  6. You will notice a change in color and consistency as well.
  7. Add the saffron along with the milk and keep stirring it.
  8. When it starts sticking at the bottom, add the ghee and gives a vigorous stir.
  9. Garnish with chopped dry fruits and serve warm or at room temperature.
Notes
Cook the halwa in low flame only.
Take care not to burn the sugar and caramelize the pineapples with utmost caution.

The word “valentine” lost its meaning perhaps in my context, but I sincerely hope many of you will find love of your life.     yesh u r alive n kicking…u kicked with a pineapple..
    first of all abt professional blogging approach or otherwise….well it depends how u look at ur blog…it is ur expression, so sumtimes dont care abt making the world happy with ur blog..aftreall its ur blog..u can do anything with it..jus express urself, enjoy it without any pressure …if u look at ur blog in a professional view ucan be more regular ,, thats how i feel..
    so u r goin thru a testing time..it happens ..its going to be settled after some time passes by…it is the pattern of life…sometimes there is phase which is very happy, then there is a long period where things seems alright..not very happy or sad, then there are phases which are sad or shocking, which turns things around, then that time passed by and everything again approaches stability…so you will be ok and fine..
    as for the cause of ur pain, be patient, give it time, give it what it wants.. sumtimes we need to give someone what he/she wants though its hurtful..or another approach will be everything is fair in love n war!so do sumthing eventful if u think its logical..depends on the kind of event…well u know lets not think like it was paradise n our minds r not mirrors that once scratched means its all over…we live in a testing world where evrything evolves n changes..what we have to remember is we have to see the pattern,understand it, we have to know understanding the pattern whats coming, how to handle when it has come to us…think logically
    nothing ever leaves you..it comes to u after some time..sumtimes in a diffrent form
    dont forget there are so many people around us who have such difficulties in their lives…try to help someone may be..once u r der u ll feel ur problem wasn’t very big, even if it is ull find courage n peace to deal with this..
    so this is ur testing time..emerge as a winner woman…

      I know “time is the greatest healer”. And this shall pass. But right now pain is so deep rooted that I lost my sense of any logical thinking. I know I have to come out of it, so probing too much deep into the problem will makes the matter worse. Sometimes it is better to let it go. As I say Time will sort it out. I know there are people suffering with more deeper pain than mine but when you are wounded, it numbs all your senses.
      Last I can not thank you enough Subhadip for writing to me, for explaining in such beautiful way to ease my pain and for encouraging me to emerge as a winner, I dont know how that is going to happen but thanks for everything.

    Hi my dear u will get through this phase… whenever I am deeply wounded I remember this ….
    I asked The Lord for 2 boons; for some beautiful butterflies and some colorful flowers…. He granted! He gave me some ugly wriggling worms and a cactus full of thorns… I cried, I wept over my misfortune but then u saw a mystery unfold; the ugly wriggling worms metamorphosised into beautiful butterflies and the cactus full of thorns sprouted colorful flowers… So don’t give up… Relationships drain us… Keep ur cool and do ur thing and keep proving to urself that u are a winner and a go- getter!!
