Ultimate double chocolate drop cookies

Double chocolate cookies with deep and intense flavour
  • Butter (unsalted) : ½ cup (113 grams)
  • Light brown sugar: ½ cup
  • Sugar granulated (white) :1/4 cup
  • Egg: 1 large
  • Vanilla extract : 1 tsp
  • All purpose flour : 1 cup
  • Dutch-processed cocoa powder: ¼ cup
  • Baking powder : ½ tsp
  • A small pinch of salt
  • White chocolate chips : ½ cup
  1. Preheat oven to 350 F.
  2. Line the cookie sheet with parchment paper or spray it with oil.
  3. In a bowl, beat the butter and sugar until light and fluffy, add the brown sugar too and beat for few more minutes.
  4. Add the egg and vanilla extract until well incorporated.
  5. In a separate bowl, sift the flour with salt and baking powder, add the cocoa and mix it well with the help of a balloon whisk.
  6. Add the flour and cocoa mixture slowly to the butter-egg mixture and beat until just incorporated.
  7. Fold in the white chocolate chips.
  8. With the help of an ice cream scoop or small round spoon, place 1 tablespoon of batter in the prepared cookie sheet, leaving a space of 5 cm in between.
  9. Bake for approximately 8-10 minutes, until the edges are firm and crisp but centre is still soft.
  10. Remove from the oven and let cookies cool on baking sheet for another 5 minutes before removing them to a wire rack to cool completely.
