- All purpose flour : 1 cup
- Baking powder : 1 tsp
- Baking soda : ½ tsp
- Unsweetened cocoa : ¼ cup
- Brown sugar : ¼ cup +
- Honey : ¼ cup
- Oats (regular) : 1 cup +
- Sour cream : ¼ cup +
- Large egg : 1
- Ripe bananas : 2 (mashed)
- Canola oil : ¼ cup
- Preheat the oven at 400 F.
- Grease a 12 cup muffin pan and set it aside.
- Mash the bananas with the help of a fork, mash it really well.
- In a large bowl sift the flour with baking powder and baking soda.
- Sift the cocoa in it.
- In a separate bowl, beat the egg, and add the sugar and honey.
- Mix it well and add the mashed bananas and oil, blend it well.
- Stir in the oats and sour cream, blend it well.
- Now add these wet ingredients mixture into the dry bowl that has flour and cocoa in it.
- Fold it well with cutting action, till few lump remains.
- Scoop out the muffin mixture into the prepared muffin pan and level the top.
- Bake it in a preheated oven at 400 F for 20 minutes, until the skewer comes clean.
- Cool the muffins in a pan for couple of minutes before taking them out.
- Cool the muffins on a wire rack.
Adjust the oven temperature accordingly.
