Banana pancakes with choclate chips and pecan - breakfast in bed

- 1 cup All-purpose flour
- 2 ripe bananas, mashed
- ½ cup chocolate chips
- ½ tablespoon sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup milk
- 1 egg, beaten
- 2 tablespoons vegetable oil
- 1 shake of cinnamon powder
- ½ tsp vanilla extract
- ½ cup toasted pecans
- In a large mixing bowl, combine flour, sugar, baking powder, cinnamon and salt.
- In a separate bowl, mix together egg, vanilla and oil.
- In a separate bowl, fork the ripe bananas, and mashed them as much as possible, add the milk and blend it well.
- Next stir the banana mixture, egg -vanilla-oil into the flour mixture and blend it well. Batter will be slightly lumpy.
- Stir in the chocolate chips in the batter.
- Heat a lightly oiled griddle or frying pan over medium high heat.
- Pour or scoop the batter onto the griddle, using approximately ⅓ cup for each pancake.
- Cook until pancakes are golden brown on both sides.
- Serve hot with drizzle of maple syrup and top it with toasted pecans.
