Banana pancakes with chocolate chips and pecans – an extravagant breakfast meal
  • 1 cup All-purpose flour
  • 2 ripe bananas, mashed
  • ½ cup chocolate chips
  • ½ tablespoon sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 egg, beaten
  • 2 tablespoons vegetable oil
  • 1 shake of cinnamon powder
  • ½ tsp vanilla extract
  • ½ cup toasted pecans
  1. In a large mixing bowl, combine flour, sugar, baking powder, cinnamon and salt.
  2. In a separate bowl, mix together egg, vanilla and oil.
  3. In a separate bowl, fork the ripe bananas, and mashed them as much as possible, add the milk and blend it well.
  4. Next stir the banana mixture, egg -vanilla-oil into the flour mixture and blend it well. Batter will be slightly lumpy.
  5. Stir in the chocolate chips in the batter.
  6. Heat a lightly oiled griddle or frying pan over medium high heat.
  7. Pour or scoop the batter onto the griddle, using approximately ⅓ cup for each pancake.
  8. Cook until pancakes are golden brown on both sides.
  9. Serve hot with drizzle of maple syrup and top it with toasted pecans.
