Maple glazed apple cinnamon mini bundt cake - fall memories

Summary: Maple glazed apple cinnamon mini bundt cake, perfect for afternoon tea with loads of fall flavour to cherish
  • 1½ cups all purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 stick butter (118 gm approx)
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • 3 eggs
  • 4 red apples ( peeled & grated)
  • Extra maple syrup for glazing or some powdered sugar for dusting the cake.
  1. Wash, peel and grate the apples.
  2. Sift the flour with baking powder and salt in a mixing bowl.
  3. Sprinkle the cinnamon and nutmeg powder and give it a stir.
  4. Preheat oven to 350 F.
  5. In a separate bowl add the softened butter, brown sugar and cream it for a while with the help of electric beater.
  6. Whisk in the maple syrup, beaten eggs and blend to combine well.
  7. Slowly add the flour into this and combine it well with the help of spatula, in a cutting action.
  8. Stir in the grated apples and combine it well.
  9. Grease and flour a six hole mini bundt cake pan and spoon the cake batter into the holes of mini bundt cake pan.
  10. Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
  11. Let it cool for another 10 minutes before turning them onto the wire rack.
  12. Dust the mini bundt cakes with powdered sugar or glaze it with maple syrup
In many of the recipes I have come across, some use chopped apples while some others use applesauce. However I found the grated apples to suit my palate and also it gives a nice texture to the dish too. I have made the recipe twice and once with Macintosh and other with southern honey crisp apples.
