Aamras -puri -is flavoured mango pulp that is enjoyed best with deep fried puffed bread called puri
  • Mangoes (Alphonso / Kesar) : 2-3 ripe and sweet, good quality
  • Cardamom powder : ½ tsp
  • Saffron : a large pinch
  1. Wash and peel the mangoes. Cut it into chunks.
  2. In a blender, blend the mango chunks into pulp together with cardamom powder.
  3. Stir in the saffron.
  4. Give a nice stir, pour it into individual bowl and chill it for at least half an hour.
  5. Serve aamras chilled with poori.
Wait for the right season to enjoy the aamras. Use very ripe and sweet mangoes to make this aamras. Preferably with alphonso and kesar variety. Use only pulpy variety and not fibrous ones. If you get only fibrous variety, then you have to strain the aamras before serving.
