Fish patties without potatoes? Why?
I have nothing against that humble potatoes, that arguably feeds the million daily as a primary staple, but I personally believe that those starchy potatoes mask the soft fresh flavour of the fish to a large extent.
I am not talking about the “fishy” flavour but the real flavour of the seafood, that I would want to shine through in these fish patties. Hence breaking the universal law of adding potatoes in the fish patties. Try this. And you will never want to make the fish patties in any other ways.
What I need to make these gluten free fish patties?
You will need these ingredients –
Any white fish or carp . You can lightly fry them in oil before using them in fish patties or you can simply boil them /poach them. You can use leftover fish from curries too. It is that versatile.
Eggs. One large egg is enough for making around 10 fish patties. Egg is the main binder here. As long as egg is there in the recipe, your fish patties will never fall apart.
Spices. You can use whatever spice combinations suits you. But do not go liberal on spices, it might mask the subtle seafood flavour of the fish.
Herbs. Like cilantro and mint. They are the main flavour players here. These herbs not only heighten the flavour profile but will surprise you in every delicious bite of that fish patties. You can use parsley too.
Staples like chopped onions, green chilies (ignore if you are making this for kids), minced ginger. They add texture and character to these fish patties.
Hung curd / yogurt, a little bit to make these fish patties melt -in- mouth kind.
Limes. Just to jazz up the flavour a little bit more.
Last, but not least the gluten free flour like rice flour, soaked rice flakes (poha) or oatmeal to add that crunchiness. No need to add the regular bread crumbs here.
How to make this gluten free fish patties without potatoes?
If you are using the lightly fried fish pieces for the recipe, the patty mixture will be dry and devoid of any excess moisture. But if you are using boiled or poached fish fillet for the recipe, it is advisable to saute the fish mixture in little oil. This step will remove the excess moisture from the fish patties and the patties wont get soggy after frying.
And no one likes soggy fish patties.
So use the wet ingredient in the recipe like hung yogurt (where whey is drained out) and lime juice in limitation.
Once you shape the fish patties, refrigerate them for minimum 30 min. This step is important for the binder in the recipe to work and to have the proper hold and texture.
These fish patties need to be shallow fried on medium low while they are still cold. So do not wait for the fish patties to come to room temperature. That is the ease of making these fish patties and you can fry them straight out of the fridge.
That is the reason you can make ahead and shape these fish patties a day before and fry them whenever you want it.
Can I bake these gluten free fish patties?
Yes, absolutely you can bake these fish patties too. All you need to grease a baking tray or you can use tin foil too, place the fish patties and bake them at 200 C for 25 min. You might want to add tiny cubes of chilled butter in the fish patty mixture too for baking. Baked fish patties taste amazingly delicious, light on stomach and overall good for health too.

Which fish is best for making patties?
Any low fat white flesh fish is good for making fish patties. Like tilapia, cod, haddock, halibut, whiting, carp, bekti / seabass suits best for fish patties. Generally I remove the skin form the fish before using them in the recipe. But you can use the skin too, it is a personal choice.
How do you keep fish patties from falling apart?
Fish patties need a good binder. Eggs are the best binder you can have.
Fish patties without crumb coated or breaded are not suitable for deep frying. These fish patties need to be shallow fried in medium hot oil.
Check the liquid in the fish patties. If the mixture is too wet, it wont be able to hold the shape. Do not rush to add flour or cornflour, it wont get cooked properly, leaving an aftertaste in the mouth.
Instead if it too wet, saute the mixture lightly in a pan, till most of the moisture is dried out. Add extra egg if requires.
Always refrigerate the fish patties after shaping them up. This helps in better binding. Do not ignore this step.
Can I freeze the fish patties?
Yes , absolutely you can freeze the uncooked fish patties. To store the fish patties in freezer, all you need is to place the uncooked fish patties in a freezer safe box, lined with parchment paper. Take care not to put fish patties one over another. You can store them upto one month, but I personally never did that. At most I had frozen them for a week.
You can also chill the uncooked fish patties for 1 or 2 days in the fridge before using them .
Easy gluten free fish patties / fish cakes with Indian spices, and made without potatoes and breadcumbs
- 300 gm Fish (boneless , minced)
- 1 Egg, large
- 1/2 cup Oatmeal / Rice flour (as requires)
- 1 Onion, finely chopped
- 2 tbsp Garlic, finely minced
- 1 tbsp Ginger, finely minced
- 1 tbsp Green chilies, finely minced (ignore if making for kids)
- 1/2 cup Cilantro leaves and stems, chopped
- 2-3 tbsp Mint leaves, finely chopped
- 2-3 tbsp Hung thick Yogurt (without whey)
- 2 tbsp Lime juice
- 1/2 tsp Red chilli powder
- 1/2 tsp Turmeric powder
- 1 tsp Cumin powder
- 1/2 tsp Black pepper powder
- Salt to taste
- Cooking oil as requires
Wash and clean the fish fillet or pieces. If using fish pieces, remove the skin. I personally do not prefer the skin in fish patties.
Lightly fry the fish pieces till they are cooked through. Then mince them, remove any bones.
If you are poaching or boiling the fish pieces, then after mincing them, add all the ingredients except yogurt , lime juices and herbs and lightly saute them in a pan. Then add the remaining ingredients and form the fish patties.
After the fish is properly minced and devoid of any bones, add all the ingredients one by one. Mix all the ingredients thoroughly with the fish mince. Check for the seasonings before shaping them into patties.
once the patties are ready, refrigerate them for 30 minutes.
Heat enough oil in a pan for shallow frying. Take out the fish patties from the fridge, and fry them on low medium heat till crisp and golden brown on both sides.
Serve immediately with sauce or mint chutney or spiced yogurt dip or with a salad or salsa.
Why these fish patties are healthy?
Fishes are excellent source of omega-3 fatty acids, vitamin -D, B2 and are great source of essential minerals like iron, zinc, magnesium, potassium, calcium and iodine. Including fish in a regular diet is considered healthy and keeps our heart, brain, and skin healthy.
But we should be aware of the rampant pollution of our water sources too like rivers, ponds and oceans. So we need to choose the good and best source of fish while buying them.
These fish patties are healthy as these are completely homemade, gluten free and devoid of fillers like breadcrumbs, flour, cornflour etc. Devoid of any starchy carbohydrates like potatoes. Making them light and easy on stomach. Made with all the good and quality ingredients like fish, eggs and oatmeal.
I have shallow fried these fish patties in little oil. You can bake them as well for more healthier option.
Are these fish patties kid friendly?
These fish patties are absolutely kid friendly also. Sometimes to enhance the nutrition level of these fish patties, I packed them up with nut powder too like almonds or cashews. You can also add raisins too in the mixture. My kid loves them.
