Life is just a bowl of cherries.
Deep toned . Cherry red color. Plump with shiny cheeks. Cherries are cute little sweet bombs.
They entice you with their sweet whispers “pick me up ! pick me up, pretty please !”
You pop some in your mouth, dunk some in the brandy and chopped some in the brownies.
Then an evil idea strike you.
You put some cherries on a baking dish. Shower them with brown sugar. Sneak a stick of cinnamon into it.
Shake it up !
… deep into the oven.
A sweet blast of flavor hints you that cherries are roasting in the oven.
Now they look more sexier. Glistening in their own juices, cherries becomes more robust.
Sugar and caramel adds wonderful flavor with a mild hint of spice.
Roasted cherries are simply phenomenal.
You pop some in your mouth, warm juices slowly explodes inside. And then you pop some more….and then some more….
Then you heard a scream from the deep recess of your mind.
Ice cream screams aloud !
Sheepishly, (guilty of having popped too many cherries in your mouth)
You put them together.
{ Roasted cherries + ice cream = happiness }
Simple pleasures of life.
Priceless.
Ice cream is happiness condensed.
Say it loud one more time. Convinced. No second thoughts. Crystal clear.
Now whip them together, condensed milk and heavy cream.
Freeeeeeeeeeeze it.
- Red Cherries : 30
- Heavy cream : 1 cup
- Condensed milk : 1 cup / 12 oz
- Brown sugar : 3 tsp
- Cinnamon stick : 1
- Cherry liquer : 1 tsp (optional)
- Wash and wipe dry the cherries.
- Put the cherries in a baking dish.
- Sprinkle brown sugar over it.
- Sneak a stick of cinnamon in the baking dish, or any other flavor you want to.
- Roast the cherries on a pre heated oven at 375 for 15 minutes, till the cherries sweat, release enough juices and sugar melts.
- Cool the cherries in the pan and de seed the cherries.
- Whip the heavy cream with a teaspoon of sugar, till it attains the stiff peak.
- Fold the whipped cream into the condensed milk and blend it gently with a rubber spatula till you get the desired smoothness.
- Fold in the roasted cherries, mix it in cutting action.
- Since I was making some brandied cherry at home, so I have added few drops of cherry liquer in the ice cream. But this is optional step.
- Freeze it in a freezer safe plastic box and let it freeze dor 45 minutes.
- After 45 minutes, when it starts to freeze at the edges, whip the icecream again with an electric blender.
- Again freeze it for at least 8 hours before serving.
Verdict : This recipe has been adapted from the recipe site of Eagle brand condensed milk . Condensed milk makes a very rich and creamier ice cream, no icicles whatsoever. The roasted cherries adds beautiful color and heightens the flavor. A very simple, easy and delicious icecream. Add your flavours and make it yours.

I found inspiration from a recipe I saw online, and just amended the cherry filling. While the original recipe used fresh cherries, I decided to roast the cherries to give them a more intense flavour. The original recipe did not state to bake the tart shells, but I like my crusts crunchy, thus I decided to place them in the oven for a little while. I also used a mix of the many Valrhona chocolates I had on hand (primarily Jivara milk, with hints of a few dark varieties).
