Fried or scrambled egg or even a omlette with some sliced tomatoes stuffed between two slices of toasted bread was my idea of having an egg sandwich, its quiet filling and … that’s all ! I wonder what else you can do with an egg sandwich, until the other day when I stumble upon an event on sandwich, I decided to send my sandwiches there. But wait ! will you send me just like that ? It seems the humble egg sandwich was giving me a queer look and pleading me saying “please dress me up “. and I give it a thought why not?
Dressing up an egg sandwich is actually quiet easy as most of the things goes very well with the egg.
For sandwiches, there is one thumb rule : the more the merrier.
Now there are two types of egg sandwiches doing the rounds in breakfast tables, egg-mayo and egg salad sandwiches. Egg salad would be perfect for a late sunday morning brunch but for breakfast, I would prefer something lighter.
Definitely it will be egg – mayo then, but with some twists added to it.
To start with let’s have a look at the ingredients:
Wheat or multi grain bread : 6 pieces
Hard boiled eggs: 4
Garlic mayonnaise: 2-3 tbsp
Cherry tomatoes: 8-10
Pickled green olives: 5-6
Cheddar cheese slice : 4
Fresh or dried parsley
Olive oil : 1 tbsp
Salt and black pepper powder
To make :
Slices (no chopping, no mashing) of hard-boiled eggs would be just right for it. Egg is nutritious, no doubt but on down side it has fat and cholesterol too, so a low-fat mayonnaise will be perfect with some flavour like garlic mayo.
Combining the mayonnaise with some herbs like dill, chives or parsley will further accentuate the flavour. I chose parsley for a mild flavour, if you like to add some bold flavour can choose dill, celery (very strong) or chives (best).
Egg sandwich will have some veggies too. Fresh or roasted red cherry tomatoes will add a sweetness to the sandwich. If you are using roasted cherry tomatoes then grease it with olive oil and sprinkle some fresh or dried basil, it will give a nice flavour and tomatoes gels perfectly well with cheese. Yes it will have some cheese too, a slice of low-fat cheddar cheese.
Now this humble egg sandwich (which is no more humble now !) needs a surprise element and that comes in form of slices of pimento stuffed pickled green olives. It makes a great combination with egg sandwiches and last do not forget to add some salt and black pepper powder.
Now the assemble part, spread evenly the garlic mayo-parsley combi on one slice of toasted wheat bread and arrange the slices of hard-boiled eggs (salted and peppered) on it.
The other slice of the bread will have partly molten cheddar cheese slice and arrange the roasted red cherry tomatoes on it.
Sandwiched the two slices of bread with pickled green olives in between.
