Whoa !!! what a weekend that was…two days of incessant rains…stormy winds cyclone – ing at more than 100 mph, uprooted trees, electric cables and poles…dismantled roofs…lurching us in the darkness for more than 36 hours…with frequent power outages…business closed…no foods…survived only on cold sandwiches…a hardboard landed on the bonnet of car like a flying saucer did a permanent damage to the car’s windshield as we were returning from the local grocery store and left me shrieked in fear…some of the impacts of hurricane’s stormy winds which we have anticipated but have not foreseen its consequences…still seems to be nightmare…but on Monday..sky changes…clear and deep blue…sun smiles again … not a trace of clouds…as we soaking the warmth of sunshine that filters through the windows…our eyes scanned the devastation that was lying bare all around…a total chaos…cleaning and restoring work is still going on…
And with restored internet..am here once again with the recipe of simple and crispy zucchini fritters that can be enjoyed any time. If you love french fries, these crisp zucchini fries which actually imitates the french fries will definitely amuse you. This zucchini fritters will be showcase in the event : Monsoon Medley, if you have not send your entries till now, then send it soon as 10 more days left.
Ingredients:
Zucchini (green ) : 1
Egg : two lightly beaten
All purpose flour : 1 cup
Bread crumbs : 1/2 cup
Salt to taste
Oil for shallow frying
Herbs (dried or fresh) : parsley or thyme (2 tsp if using dried) / 3-4 tsp finely chopped if using fresh
Method:
Wash and cut the zucchini in finger size slender sticks.
Mix the flour and salt together.
Mix the herbs with the bread crumbs.
Heat some oil in the pan up to the smoking point.
Coat the zucchini sticks first in flour mixture, then dip it in the beaten egg and finally dusted it with herb and breadcrumb mixture and gently dropped it in the hot oil.
Fry the zucchini sticks in batches until golden and crisp.
Serve the hot zucchini fritters / fries with yogurt, sour cream or any cheese dip.
Note: You can repeat the recipe with eggplants too.
