❄️ Undhiyo is a rustic mix vegetable dish and it has few regional variations too.

❄️This is third year in a row that I have prepared this beautiful medley of vegetables.
And needless to say that I'm totally in love with this dish. Flavours are so amazing, it needs little prep work but end results is just WOW.
Usually served as Undhiyo Poori platter.

❄️ Turmeric, the "Indian Saffron" is not only indispensable in our kitchen but holds a sacred place in our lives too. Enough has been said about its nutritional and medicinal values of this magic spice.

❄️ But fresh turmeric roots which are highly seasonal and appears only in winters is immensely healthy and full of immunity boosting powers.
❄️In our home, we exactly do not make this sabzi but biting on raw turmeric with lil bit of jaggery is a winter ritual that I am still following and passing the baton to the next generation also.

This is my first attempt to make a grazing board. Tell me how it is?

❄️In this grazing board I have assembled - Pumpkin chocolate marble cake slices, pumpkin cashew fudge, orange marmalade, Fruits ( grapes, tangerines and strawberries), some dried fruits ( pecans, walnuts, figs, cranberries) and cheese ( well I don't stock hard cheese 🧀 ) so..
But both me and my kid loved this idea and we immensely enjoyed this putting together.

❄️Hoping to do more such grazing boards in future with more variety offcourse.
As I am totally sold on this concept of "commune eating" and a these are such crowd pleaser too.

While it's raining cats and dogs in Bangalore, my mind keep playing back to back " cover me in sunshine ☀️😁 Pls stop this rain 🌧️ can't take it anymore.

🌸🌸Who doesn't love chocolate truffles? This one with kanchagolla sandesh covered in ganache and coated with sprinkler. That's my kid's idea anyways.

🥖 I guess am not too late to join the FOCACCIA BREAD ART party 😂

This lockdown bread art craze was swamping my Pinterest feeds for months and I was meaning to bake at least once.

🥖I had been baking focaccia for few years now but got really intrigued by the neat garden scapes done on focaccia.
.
🥖 Focaccia is the easiest bread to bake no doubt but to get the right texture comes with practice.
.
🥖Crispy bottom, crunchy top and pillowy soft interiors . Though I missed the dimpled effect after it is baked.
🥖This is 30% whole wheat focaccia and I loved the fact that how airy and light weighted was this bread. We had enjoyed it with pumpkin soup, goes absolutely fine with dips too.

🔥Hot Tart Chaat 🔥 On cold rainy days. 🌧️

👩‍🍳Made with some leftover samosa ( re heat it), boiled potatoes, boiled chickpeas, onions, tomato, grated carrots, toasted coconut = mixed with roasted cumin powder, spices, chaat masala, bit of red chilli powder, bit of black pepper powder smeared with generous drizzle of tangy tamarind chutney and mint chutney.
Garnished with poms, coriander leaves and sev.

Nestled carefully in warm and crispy multigrain tart shells.
⏩Serve warm. Do not serve this cold. You will lost the punch.

⏩ Recipe 👇
🍬Fruit candies are way of preserving the goodness of seasonal fruits and this is a very old traditional practices. The "word Candy " is a derivative of Sanskrit word Khand - the way we Indians used to preserve and mould sugarcane and date palm juices in form of jaggery. Given that refined sugar was a prized commodity then.

🍬Fruits like unripe papaya, Ash gourd are usually used to make candies like tutti frutti and Agre ka petha.
.
🤔Do you know most of the tutti frutti available in the markets now a days are SYNTHETIC 😱?.
.
🍬🍬But no worries you can make them at home today in Five easy steps---
.
⏩⏩RECIPE Save this post⏩
🍬 Cut the fruit into small squares.
🍬Boil the fruit pieces in water till tender and drain the water.
🍬 Boil the tender fruit pieces in thick syrup till the syrup dries up.
🍬ADD flavours or colours now . I have used Saffron water. Soak in syrup for 2-3 days .
🍬 Drain completely. Pat on tissue paper to get rid off the excess moisture.
Sun dried or dry it in oven for 10 min till no moisture left .
Store in a jar and use as you like it..
