💜 Jamuns Today 💜

Under that Jamun tree - the fruit that always brings back memories of our childhood.

The countless summer vacations spent under its lusty shaded bough, the memories of earthy aroma of monsoon soil, and picking up the jamuns in bamboo basket in dozens, first thing in the morning we used to do after a stormy night.
It never mattered , to whom the jamun tree belongs to. It belongs to everyone. So as the mango trees, mulberry, guava, lime, chikoo and so on.

We kids used to sit under the jamun tree on sunny afternoons with Enid Blyton in one hand and jamuns smeared with salt and chilli powder in another .

We never counted how many jamuns we ate, with reading in between, and sharing the latest news from the colony, time rolled on till the sun sets behind the blue hills , the unwritten reminder to return to your nests. Somewhere in between we grew up.

I never thought that one day will come when I have to actually buy jamuns from the fruit seller and that my kid will eat only 3 jamuns that too after lot of persuasion.

My feed was peppered with lots of jamun dishes, ice creams to cakes and smoothies, so I thought let's make something out of it.
But before that let me have a slice of my childhood days...and I just could not stop at one before I realised I had finished my limited stash of jamuns.

Having goodtimes with season's last Badami mangoes

Having goodtimes with season's last Badami mangoes. Organic, utterly sweet ( I don't have to add any sugar) and carbide free.

🌻In frame - MANGO CREPES which are #glutenfreefood and #sugarfree
that I had made for Sunday breakfast.

⏩ Recipe 👇

Rice flour - 2 cups
Egg large - 1
Mango puree - 1 cup
Honey - 2 tbsp
Butter melted- 15 gm
Vanilla essence - 1 tsp
Milk - 11/2 cup +
Salt to taste

⏩How to : Mix rice flour with salt. In a separate bowl beat egg with vanilla, melted butter.
Add this to the rice flour. Add warm milk and whisk to get a smooth flowy batter. Stir in mango puree and honey.
My mangoes were too sweet, so haven't add any sugar. If you want you can add sugar while adding the milk.
Keep it for 10 - 15 min.
In a non stick pan or cast iron pan ( grease with butter) add ladle full of batter and rotate the pan or spread the batter with the back of the ladle. Use 1 or 2 ladle at a time to make crepes.
Spread the crepes thin like dosa.
Cook on medium low until it sets. Flip it once, cook the other side for 1 min and take it out of the pan.
Serve mango crepes with fruits, cream or choclate drizzle.

Base - chocolate biscuits like Oreo, bourbon and butter. Also added oats and cornflakes
Filling - cream, white chocolate ( I use Ghirardelli) butter ( salted), honey, mango puree.
Set in fridge for 4-5 hours.

👉Chicken Kofta curry / Meatballs in Mughlai gravy. My favourite fabulous last minute dinner ideas.

⏩Chicken Kofta
To the poached and shredded chicken
+++
1 egg + 1/2 cup bread crumbs+ 3/4 cup mashed potatoes+ sliced onions+ 2 tbsp garlic green chillies paste+ 1 tbsp ginger+ cumin powder 1 tsp+ garam masala 1 tsp + salt
Mix n mash. Make balls. Refrigerate for 20 min. Fry the meatballs / Koftas till brown.

⏩ For the gravy
Make a paste out of 1 onion+ garlic 4-5, green chillies 2-3, ginger+ handful of cashew+ white pepper 1 tbsp + curd 3/4cup. Make a smooth paste.
⏩ Heat a pan, add the paste. Add 1 tbsp warm oil, 1 tbsp ghee, salt and sugar to taste+ 1 tbsp cumin powder+ 1 tsp garam masala powder, fresh pepper corns. Mix it well.
⏩ Add 1/2 cup green peas too.
When the gravy is ready, add 1 tbsp cream+ 1/2 cup milk.
Cook for 2 min.
Add the chicken kofta balls in the gravy. Stir in handful of chopped cilantro and mint.
Cover for 5 min. serve warm with naan, paratha or roti.

For us it's hot and flavoursome soups, stews and like this -

I am very fond of Thai food and this green curry is mandatory in monsoon or cold season in my home as it's amped up by goodness of lemongrass, Thai basil, and fragrant limes.
.
Other than the vegetables I love to add pan seared chicken strips too in the curry. You can also subbed chicken with paneer or tofu, it taste equally good.

I love to create different kinds of desserts with mangoes, from Rasmalai, rabdi, kalakand tart, flan , cheesecake , mango cakes and what not.
Mangoes makes everything taste so delicious.
And over the period of time, I have found that only Alphonso, kesar, Badami and himsagar suits perfectly for making desserts because they are inherently sweet in taste, pulpy and has strong flavour.
In frame is - Mango Phirni , a easy and delicious dessert that you can make anytime and for any ocassion. It needs lil bit of patience only.
