This pasta soup has my 💖
Cuddling up with this Italian Minestrone Soup -
Is the one that get often repeated on my table, summer, autumn or winter or whenever we feel like having it.
.
⏩The best part is that this time I made this soup with handrolled gluten free orichette pasta.

🍜Min-eh-stroh-nee - yes that's how it's pronounced is a hearty , healthy and nutritious soup.
.
⏩ This is how I prefer-
With red onions, garlic, celery, carrots and beans tossed in olive oil. Flavour by bay leaves and fresh thyme. And stir in homemade roasted tomato paste .
⏩Borlotti or white cannelini beans works well, here I have subbed with red kidney beans and loved it.
Stocks brings more flavour to any soups and stews and I keep one ready at home most of the time.
Spiced up with just pepper and dried oregano only. Small size pasta works well in this soup.
Plus any greens like spinach or kale you can use.
Plus some cheeeese tooo

A fabulous one bowl dinner ready under 20 min straight.
. Be assured that bowls will be licked clean. 😋

⏩ Fresh Rajma Beans or Red Kidney Beans ✨
Are not these looking so gorgeous and beautiful ?
.
These beauties are extremely seasonal and are available for very short period of time. But I was lucky enough to spot them at right time.
.
🙄 Don't roll over your eyes if I said this is the very first time I saw fresh Rajma Beans in their pods.
💃So you can imagine my excitement.

And this reminds me of my childhood days in the tribal heartland of Chattisgarh, where I had seen tribals selling the native beans - white, red , brown and black primarily . Shelled and dried and at an unbelievable cheap prices. Because they were not accustomed to our trading and monetary system.
.
But strangely my parents never brought them home. Legumes are not regular in a Bengali home, at least in my home, and in my extended family. Except chickpeas and rajma ( very occasionally) .
.
But over the years I had learned how to use legumes variously in a recipe.
.
The best part of these fresh kidney beans are that -
⏩ they need no soaking
⏩ Directly can be used in the recipe
⏩ Gets cooked in half the time.
⏩ No need to use pressure cooker.
.

⏩ Ketogenic chips
⏩ Great as a tea time snacks.

Ketogenic flour is one which is low carb, high fat, high protein.
This flour is a mix of flaxseeds, sorghum, cornmeal, rolled oats and almond flour.
All good, healthy and nutritious.
.
⏩ Baked Chips ✨ To the flour I have added salt pepper and lil bit of olive oil and hot water to make a dough.
Which is then rolled out thin, sprinkled with sesame seeds.
Baked in the oven for 10-15 min at 220C
.
✨I was once a fan of tomatillos and used to make the green salsa and sauce with them.
In India we don't get that fruit. Here's my take on tomatillos salsa with Green Tomatoes.
Taste wise it is different but this green tomato salsa holds good on its own.
⏩ I keep the flavouring simple, with minced garlic and chopped onion. Green tomatoes are blitz in the mixer with cilantro and green chillies. Bit of salt and pepper sprinkled.

Handmade Orecchiette Pasta.
⏩ Gluten free
⏩ Healthy pasta
⏩Low carb
⏩ Keto pasta - made with nuts, seeds and millet flour mix.

I have been making pasta for last two years or so following Jamie Oliver's recipe but never thought of documenting it.
After seeing @anniedeyis inspiring pasta posts I thought of sharing mine too.
.
⏩ Pic 2 how it looks after it gets cooked.
⏩Pic 3 have used this pasta in minestrone stew.
⏩ Pic 4 flour and egg.

Initially I have started making pasta with all purpose flour only, later shifted to 50% ratio of whole wheat flour. And honestly nothing beats the freshness of hand rolled pasta.
And most importantly you can control what ingredients goes into making a pasta.
.
If you have kids at home, am sure pasta will be a regular affair, atleast in my home. Once in a week it's mandatory.
.
But in last two years during this pandemic time, I have stopped using commercial pasta. Obviously when homemade pasta taste so good why you need to buy pasta from outside.
.
I usually made ribbon pasta, because that's the most easiest way to do without using any pasta machine. This time I have tried my hands on making orecchiette pasta. It's fun activity to do with the kid too.

⏩⏩ Recipe ✨✨
1 cup Ketogenic flour ( or any gluten free flour)
2 eggs
1 tbsp olive oil
⏩⏩ Sieve the flour on a work surface. make a cater in the centre. Add the eggs and salt. Whisk it gently with the fork using lil bit flour from the sides. Once it's well mixed, knead the dough. Add oil. Knead it smooth . Cover with cling wrap.
Rest for 30 min.
Divide the dough into equal quarts. Take a portion . Roll it into a log. Cut the log in cross section.
.
⏩ Take a pea size dough. Roll it into dry flour. Flatten it. Using the knuckle of your index finger, try to give a shape.
You can make other shapes too.
Boil in salted water for 10 min or less.
Use them immediately in your recipe.

So on last Friday night I gathered all the left over vegetables from the fridge - carrots, beans, baby corns, few capsicum red and green pieces, handful of cauliflower florets. I added frozen peas and potatoes.
I thought first I will make pav bhaji but then I discovered that
I ran out of onions, so skip the garlic too.
⏩Made the cashews- almond- seed - yogurt paste. Had small piece of leftover khova. So has added that too.
⏩ Made this Shahi Veg Korma which had turned out utterly delicious 😋😋😋.
We had it with paratha.

Try this Veg Shahi Korma which is very apt for the ongoing festive season too.
